Custard Recipe

A straightforward recipe for custard to serve with sponges and pies

Ingredients (to serve two people)

One egg
Half a tea spoon of vanilla essence
One cup of milk
Two table spoons of sugar
Two table spoons of flour

Mix all these ingredients thoroughly in a microwave-proof jug, mixing the egg in after the other ingredients. Shortly before serving the custard, put the jug in a microwave on full power. After the first minute it is important to watch the custard. As soon as the surface starts to rise or bubble a little, stop the microwave and give the custard a stir. Put the jug back into the microwave stirring every 20 seconds until the thickness suits your taste. If you cannot get it as thick as you like, add extra flour (conversely, if the custard becomes too thick, add less flour or take the jug out of the microwave sooner next time). Serve with fruit pies or sponges.

This custard recipe uses flour as well as an egg to thicken the custard. This largely avoids the problem of lumpy custard resulting from the egg yolk not being thoroughly mixed. For a change, try the recipe with a table spoon of cocoa powder to make chocolate sauce/chocolate custard.
