Two Minute Chocolate Sponge Cake

A quick and easy desert.

Ingredients

Half a cup of flour ("high grade flour" works well)
Half a cup of sugar
One large or two small eggs
One heaped tablespoon of cocoa powder

Mix the ingredients with a fork in a microwave-safe bowl until the mixture has a stiff creamy consistency. Leave to stand for 10 minutes and briefly stir the mixture again to ensure the sugar has disolved properly. Place the bowl in a microwave on full power for up to three minutes, until the sponge stops rising and there are no wet-looking areas on the top. The sponge is now ready to serve. Serve with custard or chocolate sauce.

Try with a couple of tea spoons of coffee instead of the cocoa powder for a change.

This microwave sponge doesn't last quite as well as oven-baked sponges, but it uses a fraction of the electricity and its quick preparation time means you can make it just before you eat. It certainly beats the instant sponges that supermarkets sell on speed, cost and you know exactly what goes into it!
